Air Fryer Cooked Outside, Raw in the Middle? Causes and Fixes
Your air fryer is browning the surface before heat has reached the centre — a predictable mismatch between temperature, food thickness, and airflow that has a clear fix for every cause. This guide covers five common symptoms, explains what is actually happening inside the basket, and tells you exactly what to do to save the meal or prevent the same problem next time.
Why Air Fryers Overcook the Outside Before the Inside Is Done
Air fryers cook by circulating very hot air at high velocity around the food in the basket. That fast-moving heat creates the browning and crisp surface you want, but it also means the outside cooks much faster than the centre, especially with thick, frozen, or crowded food. When the temperature is set too high, the surface browns and eventually burns before the inside has had time to cook through. The Maillard reaction — the browning you want — and carbonisation — the burning you don’t — both happen at the surface.
Three things make that gap worse: a temperature that is too high for the thickness of the food, a basket that is too crowded to let air circulate properly, and food that is frozen or very cold from the fridge. None of these is difficult to fix once you know which one is driving the problem. Find the symptom below that matches your food and follow the fix.
🔥 If the outside is charred or dark brown but the centre is cold or translucent
This is the most reported version of the problem, and it almost always comes down to one variable: the temperature setting is too high for the size or thickness of what you are cooking. The surface of the food hits the Maillard reaction threshold — roughly 140°C (285°F) at the food surface — well before any meaningful heat has reached the middle. The hotter the air fryer is set, the faster this gap opens up.
The heat gradient problem
Air fryers are designed for speed, and many recipes default to 200°C (400°F) or higher to maximise browning. For thin foods — fries, fish fillets, chicken strips — that works well. For thicker items like a whole chicken breast, a pork loin, or a large potato, the surface carbonises before conduction has had time to do its job. A common online observed pattern with thick chicken breasts is that users set the temperature to 200°C (400°F) to get crispy skin, then slice into the breast to find a raw, grey-pink centre. The issue is not the air fryer — it is the assumption that one temperature fits all thicknesses.
- Lower the temperature — Drop from 200°C (400°F) to around 175–180°C (350–355°F) for thick cuts. This slows surface browning enough for the centre to catch up. The reduction of roughly 20°C (35°F) is a commonly recommended starting adjustment for dense proteins.
- Increase cook time and check with a thermometer — A lower temperature means longer cooking — add 5–10 minutes and use a meat thermometer to confirm doneness. - Consider butterflying or pounding thick cuts — If a chicken breast is significantly thicker on one side, flatten it to an even thickness before cooking. Even thickness means even cooking. This is a structural fix, not just a temperature fix, and it removes the root cause rather than working around it.
🧺 If food is cooked on the top and bottom but raw where pieces touch each other
If your food looks done on the exposed surfaces but is undercooked at the contact points between pieces, the problem is airflow blockage caused by overcrowding. Air fryers cook by circulating hot air — every surface that is blocked from that airflow cooks more slowly or not at all.
The airflow block problem
A common online observed pattern is users filling the basket completely — stacking chicken pieces, piling frozen foods, or crowding mozzarella sticks — and finding that the edges brown while the huddled centre pieces remain raw or undercooked. The hot air simply cannot reach the blocked surfaces. This is particularly common with bone-in chicken pieces, which have irregular shapes that naturally create dead-air pockets when placed close together.
- Cook in a single layer with space between pieces — Each piece of food should have a gap around it so air can circulate on all sides. If that means cooking in two batches, the result will be significantly better than one overcrowded batch.
- Shake or turn food halfway through — For smaller pieces, shaking the basket or turning items halfway through exposes blocked surfaces to the airflow. This alone will not fix severe overcrowding but meaningfully helps with moderate loads.
- Check internal temperature, not just surface appearance — With crowded loads, surface browning is not a reliable indicator of doneness. Use a thermometer to check the thickest or most crowded piece before serving.
❄️ If frozen snacks are crispy or burnt on the outside but the filling is still frozen
Breaded frozen items — mozzarella sticks, pizza rolls, spring rolls, stuffed jalapeños — are particularly prone to this problem. The thin breadcrumb or pastry exterior cooks at a completely different rate to the dense, cold filling inside. At high temperatures, the coating sets and browns in minutes while the filling is still defrosting.
The ice core problem
Frozen snacks arrive from the freezer at roughly -18°C (0°F). The centre of a mozzarella stick needs to heat from frozen to fully melted — a journey of nearly 60°C (140°F) — while the coating only needs to brown, which can happen in three to four minutes. At 200°C (400°F), the coating often burns before the filling has even started to melt. A reported pattern with mozzarella sticks specifically is that high heat also causes the coating to blow out, spilling the filling before it has melted properly.
- Lower the temperature significantly — For filled frozen snacks, 175–180°C (350–355°F) is a more effective starting point than the 200°C (400°F) often suggested on packaging. The slower surface cook gives the filling time to heat through.
- Add several minutes to the cook time — At a lower temperature, extend cooking by 3–5 minutes beyond the packaging suggestion and check the filling temperature or texture (press gently — it should feel soft and yielding, not firm and cold) before serving.
- Only partially thaw if the product allows it — For items where partial thawing is safe, follow the packaging instructions. If allowed, letting the food sit for 10–15 minutes before cooking can reduce the temperature gap the centre needs to close, but do not partially thaw products that say to cook directly from frozen.
🥩 If thick cuts of meat show “done” by the timer but the thermometer reads low
Timer-based air fryer cooking is useful for thin, consistent foods. For thick cuts — bone-in chicken thighs, thick pork loin, whole chicken — it is unreliable. The timer tells you how long the food has been in the hot air; it does not tell you what temperature the centre has reached. These two things are not the same.
The thermal mass problem
Dense foods have high thermal mass, meaning they require significantly more time and energy to heat through to the core than their surface suggests. A 2.5 cm (1 inch) thick chicken breast at 180°C (350°F) will look browned and feel firm on the outside while the centre is still at 55–60°C (130–140°F) — well below the safe minimum of 74°C (165°F) for poultry. Cooking food directly from a cold fridge worsens this: starting temperature matters, and a breast at 4°C (40°F) has further to travel than one at room temperature. Note that carry-over cooking — residual heat continuing after the food leaves the air fryer — does exist, but it will not close a large temperature gap. If the thermometer reads 60°C (140°F), the food must go back in.

- Let cold meat rest briefly before cooking — Taking meat out of the fridge for 10–15 minutes while you prepare the air fryer can reduce the temperature gap the centre needs to close and make the cook more predictable. Do not leave raw meat sitting out for an extended period.
- Return undercooked meat to the air fryer at a lower setting — If the thermometer shows the centre is undercooked, return the food to the air fryer at 160–165°C (320–330°F) and cook in 5-minute increments, checking with the thermometer each time. A lower temperature at this stage reduces the risk of the exterior drying out or burning before the centre catches up.
🍤 If the batter or coating is set and browned but the protein inside is translucent
Battered or heavily coated proteins — tempura prawns, beer-battered fish, thick-crumbed chicken — create a specific challenge: the coating acts as insulation. It browns quickly while simultaneously slowing the heat transfer to the protein inside. The result is a golden, set crust with an undercooked interior.
The coating vs core problem
Unlike a simple breaded coating, thick batter adds genuine thermal resistance. The coating traps moisture during the initial phase of cooking, which delays surface browning slightly — but once set, it becomes an insulating layer between the hot air and the protein inside. At high temperatures, the outer layer finishes and continues browning while the protein inside is still effectively steaming in its own moisture rather than cooking through. This is a reported pattern particularly with homemade battered fish, where the batter is thicker than commercial versions.
- Cook at a lower temperature for longer — 175°C (350°F) rather than 200°C (400°F) gives the coating time to set gradually while the protein inside has time to cook through. Expect the total cook time to increase by 4–6 minutes compared to standard higher-temperature guidance.
- Keep the protein thin and even — The thinner the protein inside the coating, the less insulation is needed to heat it through. Flattening chicken or cutting fish fillets to an even 2–2.5 cm (about 1 inch) thickness before battering makes a significant difference.
- Check with a thermometer at the thickest point — For fish, the target internal temperature is 63°C (145°F); for chicken, 74°C (165°F). 🌡️ Six Rules to Stop This Happening Again
- Lower the temperature for anything thicker than 2.5 cm (1 inch). Start at 175–180°C (350–355°F) and extend the cook time.
- Use a meat thermometer. Surface colour and firmness are unreliable indicators of internal doneness — always check the centre.
- Cook in a single layer. Airflow blocked by crowding means uneven cooking every time, regardless of temperature setting.
- Don’t cook very thick proteins straight from the fridge. A brief rest at room temperature narrows the temperature gap the centre has to close.
- If the outside is done but the inside isn’t, return the food to the air fryer at 160–165°C (320–330°F) in 5-minute increments — lower heat reduces the risk of burning the surface while the centre catches up.
- Air fryer models vary. Basket size, wattage, and heating element design all affect actual cooking temperature — if your model runs hot, adjust down by an additional 5–10°C (10–20°F) and check earlier than the recipe suggests.
