- Add a bread slice or water — Place a slice of bread in the drawer beneath the basket, or add 1–2 tablespoons of water if your model allows it — check your manual first. The bread absorbs dripping fat before it can smoke; the water reduces the surface temperature of the drawer and lowers the chance of fat smoking or burning onto the drawer surface. Both work — use whichever suits your model.

Not all smoke comes from dirty equipment. Sometimes the temperature is simply too high for the fat content of the food being cooked. Bacon, duck breast, lamb chops, and heavily marbled beef all release significant fat, and at 200°C (400°F) or above, that fat can smoke almost immediately on contact with the hot drawer. The food may cook correctly while the smoke builds below — which is why this symptom can catch people off guard.
Why the same temperature works for some foods but not others
Lean proteins like chicken breast or fish can be cooked at higher temperatures without producing smoke because they release little fat. High-fat cuts have the opposite problem — the fat renders quickly and in larger volumes, and at high temperatures it reaches its smoke point before the cook is done. The temperature that crisps a chicken breast well may produce continuous smoke with duck thighs.
- Reduce temp for fatty cuts — For bacon, duck, lamb, and fatty sausages, try 160–175°C (320–350°F) instead of higher temperatures. The cook time increases slightly but the fat renders more gradually and has less chance of pooling and burning.
- Drain fat mid-cook — For longer cooks with high-fat cuts, pull the drawer out briefly at the halfway mark and tip the collected fat into a heatproof container. This keeps the fat level in the drawer low and reduces the chance of it smoking as the temperature builds.

The most common version is parchment paper that has not been weighted down by food — it lifts in the circulating air and contacts the heating element, where it scorches or burns. Foil placed too close to the element or blocking the basket perforations can also cause localised overheating and smoke.
Why liners cause smoke when food does not
Air fryers circulate hot air at high velocity. Any lightweight material placed in the basket without enough food weight to hold it flat will move in that airflow. Parchment that lifts and touches the element does not need long to scorch — even a few seconds of contact is enough to produce visible smoke. Perforated parchment is better than solid sheets because it preserves airflow, but it still needs food weight to stay flat.
- Never preheat with an empty liner — Always place food on the liner before the air fryer is running. An empty liner — even a perforated one — will lift immediately in the hot airflow and risk touching the element. Put the food down first, then start the cook.
- Cut liner to fit, not overlap — A liner that extends up the sides of the basket has more surface area to catch the airflow and lift. Cut parchment to sit flat on the basket floor only, leaving a gap around the edges for air circulation.
- Check the liner mid-cook — Pull the drawer out at the halfway point and check that the liner is still flat and has not shifted. Marinades, glazes, barbecue sauce, honey, teriyaki, and any coating high in sugar will caramelise and then burn faster than the food beneath them cooks. The smoke in this case comes specifically from the coating surface, not from the basket or drawer, and it often intensifies in the final minutes of the cook as the sugar fully caramelises. You may notice the smoke alongside visible darkening or charring on the food surface.
Why sugary coatings burn faster in an air fryer than in an oven
Convection heat in an air fryer is more intense and more direct than a standard oven. The same glaze that would caramelise gradually over 25 minutes in an oven can char in under 10 minutes at the same nominal temperature in an air fryer. Sugar-based coatings also sit on the surface of the food — they are the first thing the hot air contacts, which makes them disproportionately prone to burning.
- Add glaze in the last few minutes — For sticky coatings, brush the glaze on in the final 3–5 minutes of the cook rather than from the beginning. The food finishes cooking first at a clean temperature, then the glaze goes on for just long enough to set and caramelise without burning.
- Lower temp for glazed food — Reduce temperature by 15–20°C (25–35°F) when cooking marinated or glazed food. This gives the coating more time before it reaches the caramelisation and then charring threshold. The texture difference in the food itself is minimal at the lower temperature.
