Air fryer grilled cheese sounds simple until your bread is burnt on the outside and your cheese is still a cold slab in the middle. The air fryer can produce a properly golden sandwich with a fully melted center, but it needs the right temperature and a flip at the right time. Get those two things right, and it comes together in under ten minutes.
Worth Knowing Before You Cook
The temperature is deliberately set at 180°C (360°F). Higher heat burns the bread before the cheese melts; lower heat leaves you with pale, soft bread. This setting gives the cheese a proper window to soften all the way through while the outside develops an even golden crust.

- Preheat the air fryer to 180°C (360°F) for 3 minutes.
- Spread butter or mayonnaise evenly across the outside face of both bread slices, covering all the way to the edges.
- Assemble the sandwich with the cheese between the bread slices, keeping the cheese slightly back from the edges. Press the sandwich firmly together.
- Place the sandwich in the air fryer basket in a single layer. Secure with one toothpick through the center if your air fryer has a strong fan that lifts the top slice.
- Air fry at 180°C (360°F) for 3–4 minutes on the first side, until the bottom is lightly golden.
- Flip carefully with a spatula and air fry at 180°C (360°F) for a further 3–4 minutes. Check at the 3-minute mark after flipping, or 6 minutes total. The bread should be deep golden and the cheese fully melted.
- Rest on a plate for 1 minute before cutting. Slice in half and serve warm.

Why This Recipe Works
Three things separate a properly cooked air fryer grilled cheese from a disappointing one — and none of them are complicated.
- Preheating gives the bottom crust immediate contact heat, so the bread starts crisping from the first second rather than sitting in a cold basket.
- Sliced cheese rather than loose grated stays contained as it melts, significantly reducing the risk of it leaking into the basket.
- Flipping exactly halfway through gives both sides equal exposure to the circulating air and consistent browning on each face.
Pro Tips
- Spread the butter or mayo all the way to the edges of the bread — bare corners brown slower and result in uneven crust.
- Mayo is more forgiving than butter if your air fryer runs hot. It has a higher smoke point and tends to produce a more consistent crust.
- Keep the cheese a few millimetres back from the bread edges — it spreads slightly during melting and that margin stops it escaping.
- Press the sandwich firmly together before placing it in the basket. A loose sandwich is more likely to open up and let cheese leak.
What Can Go Wrong
Bread is golden but cheese is still cold
The preheat was likely skipped, or the cheese is cut too thick. Make sure the air fryer is hot before the sandwich goes in, and use standard-thickness sliced cheese rather than a thick block. Check at 6 minutes total next time — if the bread looks done but the cheese isn’t, drop the temperature to 170°C (340°F) and give it another 1–2 minutes.
Outside burnt, cheese unmelted
Temperature is too high. Bring it down to 180°C (360°F) and start checking at the 6-minute mark rather than cooking the full 8 minutes blind. Some air fryers run hotter than their dials suggest.
Cheese leaking into the basket
Loose grated cheese is the most common culprit — switch to sliced cheese and keep it slightly away from the edges. Also check you are not overstuffing the sandwich. If the bread is very thin, one slice of cheese is enough.
Storage & Reheating
Best eaten immediately. The crust softens as it sits and the cheese hardens as it cools. If you have leftovers, store in an airtight container in the fridge for up to 2 days.
Air fry at 170°C (340°F) for 2–3 minutes until the bread is crisp again and the cheese has remelted. Check at the 2-minute mark. Freezing is not recommended — the bread texture degrades and the cheese turns grainy after thawing.

FAQ
Can I use grated cheese instead of sliced?
You can, but sliced cheese is strongly preferred. Loose grated cheese melts faster and more unevenly, and it is much more likely to leak through the bread edges and into the basket before the sandwich has set. If you do use grated cheese, keep the amount modest and press the sandwich together very firmly.
Do I need to preheat the air fryer for grilled cheese?
Yes. A cold basket means the sandwich sits in low heat for the first minute or two before the temperature climbs, which slows browning and melting and increases the chance of cheese leaking before the bread has crisped enough to hold everything in place. Three minutes at 180°C (360°F) is enough.
Can I make more than one sandwich at a time?
