Five Air Fryer Fundamentals
Most disappointing air fryer results come down to heat, moisture, airflow, doneness, or oil. Get these five things right and everything else becomes easier.
01
Preheat when timing and crispness matter
Preheating gives food immediate, consistent heat and can improve browning. Some air fryers preheat automatically or are designed to start cold, so follow your model’s instructions.
Do this: When preheating is recommended, allow about 3 minutes at the cooking temperature before adding food.
02
Remove excess surface moisture
Surface moisture creates steam, which can slow browning and soften the exterior. Pat meat and vegetables dry when crispness is the goal.
Do this: Remove visible moisture with paper towels just before seasoning and cooking.
03
Give hot air room to circulate
Air frying relies on fast-moving hot air reaching the food. Crowding the basket traps steam and produces uneven, softer results.
Do this: Arrange food in a loose single layer with space between pieces, and cook in batches when needed.
04
Check doneness, not just the timer
Cooking times vary by air fryer model, food thickness, quantity, and starting temperature. Use appearance and texture as well as time, and use a food thermometer for meat and poultry.
Do this: Begin checking a few minutes before the suggested cooking time ends. Fix uneven cooking →
05
Use oil lightly, and only when needed
A thin coating of oil can improve browning on lean, breaded, or starchy foods. Fatty or already-oiled foods may need none. Too much oil can leave food greasy rather than crisp.
Do this: Toss or spray food lightly and avoid oil pooling in the basket.

— Fix It
Troubleshooting
The most common problems and their actual fixes.
Food isn’t getting crispy
Most likely cause: Too much moisture on the surface, an overcrowded basket, or too low a temperature. Pat food dry, cook in a single layer, and make sure you have preheated. For the full breakdown of every cause and fix — why air fryer food doesn’t crisp →
Machine is smoking
Most likely cause: Grease dripping onto the heating element. Reduce temperature to 175°C (350°F) for fatty cuts, place a slice of bread in the drawer to catch drips, and clean the basket after every use. For every cause and fix — why is my air fryer smoking →
Air fryer cooking unevenly
Most likely cause: Overcrowded basket, food not being shaken or flipped, or pieces of different sizes. Cook in a single layer, shake at the halfway mark, and preheat before the food goes in. For every cause and fix — why is my air fryer cooking unevenly →
Cooked outside, raw in the middle
Most likely cause: Temperature too high, or pieces too thick. Lower the temperature by 15°C (25°F) and extend cook time. For thick cuts, consider finishing in the oven after the air fryer crust is set. For every cause and fix — why air fryer food is cooked outside but raw in the middle →
Air fryer taking too long to cook
Most likely cause: An overcrowded basket, skipped preheating, or opening the drawer too often to check on food. Cook in a single layer, preheat when the recipe assumes it, and resist peeking more than the recipe calls for. For every cause and fix — why does my air fryer take so long to cook →
Breading is falling off food
Most likely cause: The food surface was wet when coated, or the crumbs were not bonded firmly enough before cooking. Dry the food completely, use a binder, press the coating on firmly, then oil the outside before it goes into the basket. For every cause and fix — why air fryer breading falls off →
Air fryer smells burnt
Most likely cause: Grease buildup, food residue, or manufacturing residue on a new unit. Clean the basket, drawer, and heating element thoroughly. If the smell is sharp or chemical rather than smoky, inspect the basket coating before cooking again. For every cause and fix — why does my air fryer smell burnt →
Basket coating is peeling or flaking
Most likely cause: Physical damage from metal utensils, abrasive cleaning, or thermal shock from cold water on a hot basket. Stop cooking with the basket if flakes are visible in food. For every cause and fix — air fryer basket coating peeling →
